Have I mentioned I love my crock pot?
I made the best ham I think I’ve ever tasted the other night – and since there’s no husband around to share it with, I’ve been having the best lunches all week!
The local grocery store has been periodically having buy one get two free specials on ham lately so it’s even a pretty economical meal. Especially since I get at least two full means out of it but putting it in a pasta the next day.
I found this recipe in the fabulous cookbook “Not Your Mother’s Slow Cooker Recipes for Two” and adapted it a bit to make it work for me. I love this cookbook – though with a growing family it doesn’t exactly meet my needs. I’d love to get my hands on the original family cookbook.
Glazed Ham with Pineapple:
This truly was easy and tasted way better than I expected it to. I put in a small bowl 1/4 cup packed brown sugar, 1 Tbsp honey, and 1 Tbsp dijon mustard and mixed to make a glaze. I then put a frozen Virginia ham into my slow cooker (a couple pounds or so) and poured the glaze on top. I poured 1/2 cup crushed pineapple on top and set the crock pot to high for an hour or so. I then turned the temperature to low and let it sit for about seven hours (it was supposed to be 5 or 6 but a little more time didn’t hurt it). The resulting meat was beautiful, more flavourful than any ham recipe I’ve ever tried, and the sauce was great on top.
